3 Ingredient Lemon Curd

Ingredients:

  • 3 lemons juiced (about 1/2 cup fresh lemon juice)

  • 1/4 cup maple syrup (honey or agave would work here as well)

  • 2 tsp tapioca or cornstarch

  • pinch of salt

  • *optional 1/8 tsp turmeric for color

Method:

  1. In a small saucepan, add all of the ingredients and whisk until there are no lumps of the tapioca starch. You may want to pour your lemon juice through a strainer to ensure your curd is completely smooth.

  2. Turn the heat on to medium high and continually whisk until the curd has thickened to your liking. This should take about 10 minutes. And yes, you really do need to whisk for the majority of the time or else the starch with begin to clump.

  3. Immediately transfer to a jar or bowl and set aside to cool.

  4. Store in the fridge and use to top desserts, fill cupcakes, or just to eat by the spoonful if you're feeling crazy. Enjoy :)
