Ingredients:

  • 1 can chickpeas rinsed and drained

  • 1/4 cup tahini

  • juice of half a lemon

  • 1 clove of garlic

  • 3-4 tbsp olive oil

  • 3-4 tbsp water

  • salt and pepper to taste

  • paprika and cilantro for garnish

Method:

  1. In a food processor, combine the tahini and lemon juice and let it run until well combined.

  2. Add in chickpeas, garlic, olive oil, and salt & pepper. Let that run for a about 20-30 more seconds. Scape down the edges and let it run for another 20 seconds or so.

  3. While it is still running, add in a tbsp of water at a time. I used 4 tablespoons, but you can use more or less depending on the consistency you prefer.

  4. Pulse until smooth and well combined. Scoop into a bowl or plate, garnish, and serve! Store covered or in an airtight container in your fridge. Enjoy :)
