Ingredients:
1 can chickpeas rinsed and drained
1/4 cup tahini
juice of half a lemon
1 clove of garlic
3-4 tbsp olive oil
3-4 tbsp water
salt and pepper to taste
paprika and cilantro for garnish
Method:
In a food processor, combine the tahini and lemon juice and let it run until well combined.
Add in chickpeas, garlic, olive oil, and salt & pepper. Let that run for a about 20-30 more seconds. Scape down the edges and let it run for another 20 seconds or so.
While it is still running, add in a tbsp of water at a time. I used 4 tablespoons, but you can use more or less depending on the consistency you prefer.
Pulse until smooth and well combined. Scoop into a bowl or plate, garnish, and serve! Store covered or in an airtight container in your fridge. Enjoy :)
