Cilantro Lime Hummus

Hummus is one of the most versatile and underrated foods in my opinion. It can be used for snacking, meals, and even dessert! Of course original hummus is absolutely delish, but if you're feeling like taking your hummus game up a notch, this cilantro lime hummus is just for you. It's incredibly easy to quickly whip up and stores in your fridge which makes snacking throughout the week so much easier!

Ingredients:

  • 1 can drained chickpeas

  • 1/4 cup tahini

  • 1/4 cup lime juice

  • 2 tbsp olive oil

  • 1/2 cup cilantro

  • 1 jalapeno diced

  • 1 clove garlic

  • 3 tbsp water

  • s+p to taste

Method:

  1. In a food processor, combine the tahini and lime juice for about 20-30 seconds, until the tahini becomes somewhat whipped.

  2. Add in the drained chickpeas, olive oil, garlic, and salt+pepper, and pulse for another 30 seconds.

  3. Toss in the cilantro and jalapeno and give it another whirl until everything is well combined. At this point your hummus will be pretty thick and won't be super smooth. In order to reach that super smooth and creamy consistency, add in a tbsp of water at a time until it reaches your liking.

  4. Serve immediately with a drizzle of olive oil, fresh chopped cilantro, lime juice, and fresh cracked pepper. OR you can store in an airtight container in the fridge for about a week.
