Shortbread Jam Cookies

With only a few simple ingredients, these shortbread cookies are easy to make and make for a delicious quick snack or dessert. Spring is right around the corner and there's no better way to celebrate than with these light, fruity, and healthy biscuits. Go ahead and make a batch or two to share with friends and family and to spread happy spring vibes all around :).




Ingredients:

  • about 1/2 cup jam of choice (here is my easy homemade jam recipe that I used to make these biscuits, but you can use whichever jam you prefer)

  • 1 cup almond flour

  • 1/2-3/4 cup tapioca flour/starch

  • 1/4 cup sticky sweetener (I used maple syrup, you can use honey or agave if you like)

  • 1 tsp vanilla

  • optional zest of lemon

  • pinch of salt

  • *for the glaze mix together 1 tsp of sticky sweetener, 1 tsp milk (I used almond), and 1 tsp tapioca flour/starch

Method:

  1. Preheat oven to 350F. In a small bowl combine the almond flour, tapioca starch, sweetener, vanilla, and salt until it is formed into a ball. Start out with 1/2 cup of tapioca starch and slowly add until your ball holds together, but isn't sticking to your hands.

  2. Place ball onto a piece of parchment paper that has lightly been dusted with tapioca flour. Press down slightly making a flat circle and dust a bit more flour onto the surface. Place another piece of parchment paper on top and roll out into a thin sheet.

  3. Next, cut out circles (or whatever shape your heart desires) with a cookie cutter. Make sure you have a small cookie cutter and a larger one. Place the cutouts on a lined baking tray and using your smaller cookie cutter, cut out the middle of half of the lined cookies. Use the scraps and cutout middles to re-roll the remaining dough to make more cookies. Repeat this process until all of the dough is used.

  4. Alternatively, if you don't have cookie cutters or can't be bothered to roll out dough and cut it out- you can make thumbprint cookies. Simply take about a tablespoon of dough, roll it into a ball with your hands, set down on your lined baking tray, and make a relatively deep thumbprint in the center of each ball.

  5. Brush a thin layer of the glaze over all of the cookies and place in the oven to bake for about 9-12 minutes. Allow to cool completely before dolloping a spoonful of jam onto the center of each cookie that has not been cut out. Sandwich cookies with cutouts on top of the cookies with dollops. You can dust with a bit of powdered sugar for some pizazz (health violation I know!!!). Store at room temperature, enjoy :)
