Raspberry Dark Chocolate Oat Bars

Honestly no description is needed for these bars. The name gives it all away. And you know that's enough for you to make them because raspberry and dark chocolate combined may be one of the best things in the universe. And also it may be 4am while I'm typing this recipe up and my mind has reached a blank. And all I know is I wish I had one of these bars right now to give me brain fuel to have something more to say about them. Unfortunately I do not but I do know that you won't regret making them. They may seem fancy but they're quite simple to make and surely will make your day (or night) a whole lot better.



Ingredients


  • 1 1/2 cups rolled oats

  • 1/2 cup almond butter

  • 2 tbsp maple syrup (or honey or agave)

  • 1 tbsp coconut oil

  • 1 tsp vanilla

  • pinch salt

  • 1/4 cup almond flour

  • 2 cups frozen raspberries

  • 1/2-1 cup dairy free dark chocolate chips (depending how much chocolate you want)

Method:

  1. Mix oats, almond flour, and salt in a bowl.

  2. In a separate bowl melt together almond butter and coconut oil and then stir in the vanilla and maple syrup. Pour the wet ingredients into the dry ingredients and mix until it comes together.

  3. Press about 3/4 of that mix into a parchment lined loaf pan.

  4. Top with raspberries followed by chocolate, and then sprinkle on remaining oat mix.

  5. Give it all a good press and then pop in the oven at 350F for 35 minutes. Allow chocolate to cool and harden completely before cutting or else it may be really messy.
