Pistachio Ice Cream

If you like pistachios, you're sure to like this exceptionally creamy treat. Now, when making ice cream, an ice cream maker is always recommended for optimal creaminess. But if you don't have one, don't fret, you can still easily make this recipe. After all, all you need is 4 ingredients and a bit of patience.


Ingredients:

  • 11/2 cups deshelled pistachios

  • 1 can full fat coconut milk

  • 1/3 cup maple syrup ( a little more if you like it a bit sweeter)

  • splash of almond extract (if you don't have this, you can sub vanilla extract-almond just really brings out the nuttiness of the pistachios)

Method:

  1. If using an ice cream maker, make sure it has been sitting in the freezer for at least 24 hours.

  2. Place the pistachios into a blender and blend until they have become tiny little pieces-almost powdery. Add in the remaining ingredients and blend at a high speed until thick, creamy, and smooth.

  3. Pour this into your ice cream maker if you are using one and let it run until it becomes soft serve consistency. If you don't have an ice cream maker, pour mixture into a loaf pan, cover with plastic wrap so that it is touching the cream, wrap the entire thing in a plastic bag, and place in the freezer for a few hours. You can take it out every hour or so and give it a little stir to prevent frosting.

  4. Scoop, serve, and enjoy :)
