
I bet a lot of you have all been thinking "All right Chloe your stuff looks alright and all but there's no way I have the time on my hands to actually bake something". If this sounds like you, then friend I have just the thing for you. This mug cake takes just over a minute to cook and maybe add 3-4 minutes to find all the ingredients and mix them together in a mug. It could not be more straightforward. OH I forgot to mention it is also extremely moist (hard to find in a cake that cooks in the microwave), and nice n' chocolatey. Also you can customize it however you'd like. For instance I like to top it with more chocolate for good measure and then load it up with as many fresh berries as possible. But you could keep it rich by adding a dollop of peanut butter on top and let it get all melty. Or anything else you would want with a chocolate cake. UP TO YOU. All I'm saying is next time you want a baked good but you're lazy af you now have an answer.
Ingredients:
1 flax egg (1 tbsp ground flax seed+2.5 tbsp water; mix together then let sit until thickened- you can also sub a regular egg)
1 tbsp almond butter (can sub any nut or seed butter, I just like almond because it doesn't have a strong flavor)
1 tbsp liquid sweetener of choice (maple syrup, agave, honey, etc.)
1 tbsp flour (I used spelt, I'm sure any other flour would work just as well)
1 tbsp cocoa powder
1/4 tsp baking powder
1/4 tsp vanilla (optional)
pinch of salt (optional)
whatever add-ins you want (chocolate chips, peanut butter, berries)
Method:
Mix all the ingredients in a mug and microwave for about 1 minute and 15 seconds, give or take a few seconds depending on your mug and the microwave. It's always good to start out around a minute and check on it. If it isn't a cake like consistency yet, just pop it back in for a few more seconds.
