This banana bread is made with 100% whole wheat flour and is completely refined sugar free-super healthy I know-must not taste very good right? Wrong. This may be one of the best banana breads I have ever tasted. It is the perfect balance between fluffy and moist and almost just melts in your mouth (as much as a slice of bread can?). I guarantee that even someone who claims to hate anything with whole wheat in it, will be drooling over this loaf :) Ingredients:
1 1/2 cups whole wheat flour
2 mashed bananas
1/4 cup melted coconut oil
2 flax eggs (mix 2 tbsp ground flax seeds with 5 tbsp water and let sit for 10-15 min OR sub regular eggs)
1/3 cup maple syrup
1 tsp baking soda
1 tsp cinnamon
1/2 tsp apple cider vinegar
1 tsp vanilla
pinch of salt
option to add 3/4 cup blueberries, chocolate chips, or chopped nuts
Method:
Preheat oven to 350F.
In a medium bowl combine all the dry ingredients minus the chocolate chips and nuts.
In a separate bowl, mash the bananas and then mix in the remaining wet ingredients until well combined.
Pour the wet ingredients into the dry and mix until fully incorporated.
Fold in the chocolate chips, bloobs, and/or nuts.
Pour batter into a 9x5" loaf pan that is lined with parchment paper.
Bake at 350F for one hour, let cool for a few minutes before removing from loaf pan.
Enjoy plain, or smear with some almond or peanut butter for a protein packed and filling snack.
Store in an airtight container at room temperature.
