
Ingredients:
2 cups almond flour
1/2 cup teff flour
1/4 cup coconut sugar
1/4 cup avocado oil (can sub a different oil if you'd like)
1/3 cup molasses
1 flax egg (mix together 1 tbsp ground flaxseed + 2.5 tbsp water and let sit 10-15 minutes until thick and goopy)
1 tsp baking soda
2 tsp cinnamon
2 tsp ground ginger
1/4 tsp allspice
1/4 tsp cloves
1/8 tsp nutmeg
pinch of salt
Method:
With an electric mixer beat together coconut sugar and oil just until combined.
Add in flax egg, molasses, and vanilla and beat together until everything is well incorporated. You may need to scrape down the sides of the bowl with a rubber spatula every so often.
Dump in all of the spices, baking soda, and salt. Beat once more to mix thoroughly.
In a separate bowl, quickly mix together the almond and teff flour. Pour about half of the flour mix into the wet ingredients and either use your electric mixer to incorporate flour or switch to your hand (eventually the dough will become too thick for your mixer so you'll be using your hands anyways). Pour the second half of the flour in and use your hands to mix and knead the dough into a smooth ball. Add more flour here if the dough won't smooth into a ball.
Once you have your dough into a ball, flatten it into a disc, cover in plastic wrap and place in the fridge for 30-60 min.
Take your dough out of the fridge and preheat the oven to 325F.
Roll your dough out to about 1/2 inch thick and use cookie cutters of whatever shape your heart desires to cut out cookies of your rolled out dough. Gather the scraps into a ball and roll out again, cutting out cookies. Repeat until you have used up all of the dough. (I rolled my dough out on a silicon baking sheet with a piece of parchment on top, but I'm sure sandwiching between two pieces of parchment would work just as well.)
Transfer your cutout cookies to a lined baking tray (mine was lined with a silicon baking sheet but again, parchment paper should work just fine-might take less time to bake though, so be careful). Be sure not to overcrowd your baking tray!
Bake cookies at 325F for 13-15 minutes- be very careful they can burn quite quickly so keep an eye on them!
Let cool and decorate them with melted white chocolate (you can order dairy free white chocolate on amazon) or your favorite icing recipe! Store at room temperature in an airtight container, enjoy :)
