Extra Fudgy Cherry Brownies

Ingredients:

  • 3/4 cup cocoa powder

  • 1/2 cup maple syrup

  • 1/3 cup almond milk

  • 1 cup almond flour

  • 1 cup fresh or frozen cherries chopped into small pieces (you can omit if you want just regular brownies or sub a different fruit!)

  • 1/2 cup dairy free dark chocolate chips (use ones that don't have any sugar or omit if you want to keep the recipe refined sugar free)

  • 3 flax eggs (mix together 3 tbsp ground flaxseed with 7.5 tbsp water and let sit until thickened-about 10/15 min)

  • 1 tsp corn or tapioca starch

  • 1 tsp vanilla

  • pinch of salt

Method:

  1. Preheat oven to 350F.

  2. In a saucepan over medium-low heat, combine your cocoa powder, maple syrup, and almond milk. Heat just until it becomes fully incorporated and smooth.

  3. Remove from the heat and pour into a mixing bowl. Add in your flax eggs, vanilla, and salt and mix until well combined.

  4. Stir in your almond flour and starch.

  5. Fold in your chopped cherries and chocolate chips. Transfer to a greased and lined loaf pan (9x5) and bake for 1 hour 10 minutes. If you want to bake it in a square pan (8x8), you will have thinner brownies, therefore cook time should be much shorter-so keep on eye on them. I highly recommend baking in a loaf pan for the ultimate fudginess (yes bake time is really long but I promise that it's worth it).

  6. Allow to cool a about 10-15 minutes before removing from the pan and slicing. Store in an airtight container at room temperature for up to a week. Enjoy :)
