
Ingredients (yields about a dozen cookies):
1 1/2 cups rolled oats (or if you have premade oat flour use that)
1/2 cup cacao or cocoa powder
3/4 tsp baking soda
pinch of salt
1/3 cup melted almond butter
1/3 cup maple syrup (or other liquid natural sweetener of choice)
1 tsp vanilla
1/2 cup roasted almonds roughly chopped (or roast your own in an oven at 400F for about 11-12 min)
1/2 cup dark chocolate dairy free chips
Method
Preheat oven to 350F.
In a high speed blender, blend your oats for about a minute to turn the oats into a fine oat flour. Add in your cacao powder, baking soda, salt, and blend just until oat flour and cacao powder are combined.
Dump the contents of your blender into a medium sized mixing bowl. Add in melted almond butter, maple syrup, and vanilla. Mix well with a rubber spatula (batter will be THICCC).
Fold in about three quarters of chocolate chips and chopped almonds (if you feel no need to make your cookies pretty then just dump all of the chocolate chips and almond in).
Take a heaping tbsp of batter, roll into a ball, and smoosh down on lined cookie tray to resemble the shape of a cookie (these cookies don't spread, so you have to shape them yourself).
Using the remaining chocolate and almonds, gently press a few of each onto the top of each cookie.
Bake at 350F for 10-12 minutes. Let cool for at least 5-10 minutes before digging in. Store at room temp in an airtight container. Enjoy :)
