Dark Chocolate Raspberry Granola

Dark chocolate and raspberry might just be one of the best combos ever, and this granola definitely proves that to be true. Each bite is the perfect explosion of flavor and crispiness in your mouth. I know you may be thinking "why make my own granola when I can just buy it?", and yes there are some really good granolas out there. BUT not only is making your own granola super easy and fairly quick, it is also really fresh and you can eat it right out of the oven. Not to toot my own horn but this honestly may be one of the best granolas I have ever tasted. Why don't you give it a whirl and let me know what you think? Ingredients:

  • 1 1/2 cups of oats

  • 2 tbsp ground flax seeds

  • 1 tbsp hemp hearts

  • 1 tbsp chia seeds

  • pinch of salt

  • 1/4 cup almond butter (or any nut butter of choice, however you may want to stay away from peanut butter because pb has a strong flavor that could overpower the granola)

  • 1/4 cup maple syrup (or other sticky sweetener of choice)

  • 1 tbsp melted coconut oil

  • 1/2 cup dark chocolate chips

  • 1/2 cup freeze dried raspberries

Method:

  1. Preheat oven to 350F.

  2. In a mixing bowl, combine the dry ingredients. Leave out the chocolate and raspberries, you will mix those in at the very end.

  3. Add in the almond butter, sweetener, and coconut oil. Mix together until there are no more dry oats, and small clumps have formed.

  4. Spread out onto a parchment lined baking tray. Bake for 7 minutes, take out and mix, bake for another 7 minutes.

  5. Allow to cool for five minutes out of the oven, and then add in the chocolate chips and raspberries (this allows for some of the chocolate to melt but also leaves some whole). Gently mix in the chocolate and raspberries, but not too much, you still want to keep some whole chips.

  6. Cool completely. Store in an airtight container in a cool, dry place for up to two weeks. Use for your morning cereal, to mix in to yogurt, to top your smoothies, and so much more! Enjoy :)
