Coconut Chocolate Macaroons

If you're looking for a simple dessert that's not super decadent but satisfies your sweet tooth, these macaroons are just the thing for you! These balls of bliss require just a few ingredients to be made yet they're absolutely delicious.


Ingredients:

  • 2 cups shredded coconut

  • 1-2 tbsp lite coconut milk (can)

  • 2 tbsp sticky sweetener

  • 1/4 cup dairy free dark chocolate

Method:

  1. In a blender, give the coconut a few pulses to make smaller pieces but not enough to turn it into a powder.

  2. Dump coconut into a bowl and add in coconut milk and maple syrup and stir. At this point you should be able to squeeze mixture together and it will stay.

  3. Form into balls and place in freezer to set up while you melt your chocolate.

  4. Dip bottoms into melted chocolate and then drizzle remaining chocolate over the tops. Put into fridge to let chocolate set up.

  5. Store in airtight container in fridge. Enjoy :)
