Blueberry Oat Streusel Muffins

Ingredients:

  • 1 3/4 cup oat flour (you can make this from blending whole oats in a blender or food processor)

  • 1/2 cup coconut flour (you can blend this with the oats)

  • 1 mashed banana

  • 2 flax eggs (mix 2 tbsp ground flax seeds with 5 tbsp water; can substitute chia seeds or regular eggs)

  • 1/4 cup good quality maple syrup

  • 1/2 cup+2 tbsp milk of choice (I used coconut milk)

  • 3/4 cup of either fresh or frozen blueberries

  • 1 tsp baking soda

  • 1/2 tsp apple cider vinegar

  • splash of vanilla extract

  • 1 tsp cinnamon

  • pinch of salt

For the streusel topping:

  • 3 tbsp oats

  • 3 tbsp hard cereal crushed (I used bran flakes, if you are gluten free you can use rice chex)

  • 1 tbsp maple syrup

  • 1 tsp cinnamon

Instructions:

  1. Blend oats and coconut until they turn into a fine flour

  2. Add in the remaining ingredients (minus the blueberries) and blend until smooth

  3. Fold in the blueberries

  4. Fill muffin tin with mixture

  5. Top with streusel

  6. Bake at 375 degrees for 20 minutes

  7. Allow to cool for 10 minutes and enjoy :)
