
If you are looking to broaden your horizons and bring a little oomph to your dessert game, then you will love these chewy baklava cookies. Well if you like baklava that is. These cookies are filled with the most mouthwatering baklava center packed with nuts and honey (not vegan. i know. GASP. -but they can be made with maple syrup or agave as well no worries) and they definitely taste like the real deal. The only difference here is the texture, and personally I prefer the baklava taste inside a chewy cookie texture. Why don't you guys try them out and let me know what you think?
Ingredients
For the cookies:
2 cups almond flour
1 tbsp coconut oil melted
2 tsp vanilla
1/2 tsp baking soda
1/4 cup+2 tbsp sticky sweetener
pinch of salt
For the filling:
1/2 cup walnuts
1/4 cup pistachios
2 tbsp honey
1/2 tsp cinnamon
Method:
Preheat oven to 350F.
Combine all the cookie ingredients in a bowl. Scoop out onto a cookie sheet and place in the oven for 12 minutes.
Meanwhile, in a food processor blitz nuts and cinnamon until they are in small pieces. Add in the honey and pulse until a sticky ball forms.
Once the cookies come out of the oven, spoon on aout a teaspoon of filling in the middle of each cookie. Give a little press and place back into the oven for another 3 minutes.
Allow to cool for about 5 minutes and enjoy :)
