
Ingredients
For the donuts:
1 scant cup unsweetened applesauce
1 flax egg (mix 1 tbsp ground flax seed with 2.5 tbsp water and let sit until thickened)
1/2 cup apple cider
1 cup brown rice flour
1/2 cup teff flour (or more brown rice flour)
1/2 cup tapioca flour
2 tbsp coconut sugar (or other granulated sugar of choice)
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
For the glaze:
1 cup apple cider
2 tsp tapioca or cornstarch
*cinnamon+sugar for coating after glaze (I mixed about 1/2 cup sugar with 1 tbsp cinnamon, but it's up to you how cinnamon-y you want them
Method:
Preheat the oven to 350F.
In a medium size mixing bowl, whisk together the dry ingredients for the dough.
In a separate bowl combine the wet ingredients. Pour the wet ingredients into the dry and give a good mix until the dough is well combined.
Transfer into a piping bag (or plastic bag if you don't have one), cut the end so you have a decently wide hole, and pipe into a greased donut pan (I used coconut oil). Fill each donut slot about 3/4 of the way up.
Place in the oven and allow to bake depending on the size of your donuts, it may take longer to bake. I used a mini donut pan, so my donuts were done in about 9 minutes. If you are using a regular size, check with a toothpick every few minutes- my guess is that they will take about 25-30 minutes to bake through.
While your donuts are baking, in a saucepan over medium heat, whisk together your apple cider and tapioca starch. Whisk continually until the sauce thickens to a glaze like texture. It should take about 5-6 minutes (arm workout! but trust me if you stop whisking you'll end up with a weird and lumpy sauce). Once it is to your liking, remove from the heat.
After your donuts have cooled, dunk them in the glaze and place on a cooling rack which allows for the excess glaze to drip off.
Give the glaze some time to set up and then coat them in your cinnamon sugar mix. Store at room temp in an airtight container. They may be a little messy but they are absolutely delicious and the perfect fall breakfast! Enjoy :)
