Refined Sugar Free Caramel Sauce

Ingredients:

  • 3/4 cup coconut sugar

  • 1 cup coconut milk from the can

  • 1 tsp vanilla extract (optional)

  • 1/8 tsp salt (optional)

Method:

  1. Add the sugar and milk to a saucepan on medium high heat.

  2. Let the carmel simmer until thickened, stirring every few minutes. It should take about 30 minutes to thicken into a caramel.

  3. Turn off the heat and stir in the vanilla and salt.

  4. Sometimes it may seem a bit lumpy (could be coconut chunks or that the sugar was lumped together), but just pour through a strainer a you'll be left with a smooth caramel sauce.

  5. Use to top brownies, ice cream, dip apples in etc. Store at room temp in an airtight container. Enjoy :)
